Red wines of character, grace and passion.

Our minimally intrusive winemaking techniques create balanced, naturally complex, flavourful wines. All our red grapes are hand-harvested at optimum ripeness, placed in small bins, gently crushed, destemmed and then cold soaked prior to fermentation to enhance richness and complexity. Varietals are fermented separately to facilitate the unique qualities of each variety, except for a small percent of Viognier with our Syrah, as is required of a traditional Rhone style of Syrah. Grapes skins are left in contact with the juice (extended maceration) of up to 7 weeks enabling tannin development, depth and structure. We then carefully press the wine off the skins and age the wines in specially selected French and American oak barrels in our cellar for up to two years. All 10 vineyard lots are kept separate through the entire process to retain their appellation uniqueness and enable layering of unique flavours when our winemaker is ready to blend. No fining or filtering is done prior to bottling to ensure full flavour development.

Black Dog 2006

Two of the more traditional ways to tame a big red blend is time and new oak. We used both. This version of Black Dog was aged 40 months in new French and American oak. We feel the result is justified: blackberry, currant, cassis, cedar box and leather on the palate and an aroma rich with cocoa and fig. Share with the most deserving friends and cook them something wonderful.

Merlot Cabernet Sauvignon 2008

A classic French pairing of grapes that complement each other beautifully. While Merlot dominates the blend, the Cabernets provide their own unique contributions. Ready to drink on release but look for some interesting developments if you choose to cellar it over the next five years. It’s ideal with grilled meats and select aged cheeses.
