Sparkling

Considered the “mad wine”, Dom Pérignon one of Champagne’s early innovators, is believed to have declared when he had finally perfected his new technique with a white wine that exquisitely stood up to the bubbles, “Come quickly, I am tasting the stars!” How appropriate then that Township 7’s “mad wine” is named Seven Stars!

We follow the classic méthode champenoise style of sparkling wine. The key process to crafting champagne is in the second fermentation that occurs in the bottle. First however, is the selecting of the “cuvee” or base wine, of Chardonnay and Pinot Noir. The grapes are purposely harvested at low brix (sugar) levels with high acidity in order to facilitate the second ferment or bubble process. After grapes are pressed they are fermented, bottled with yeast added, and then capped where a second fermentation occurs. During this second fermentation or “En Tirage” process, carbon-dioxide is created and trapped in the bottle, thereby creating the sparkle! Similar to the technique in France, Township 7 ages its sparkling wine “En Tirage” for almost three years and then undertakes the final process of hand riddling (manual 1/8 turn of the bottles daily), dégorgement (removing spent yeast solids by freezing) and dosage (topping up the bottle) prior to final corking of our Seven Stars 2008

Crafted from Pinot Noir and Chardonnay grown on our Langley estate vineyards, our 7 Stars sparkling is produced in the traditional méthode champenoise style of French champagne. En Tirage for 2.5 years in the bottle, the sparkling wine has lively bubbles with vibrant citrus and floral aromas. Crisp apple and stonefruit flavours can be found on the palate with a hint of baked goods and fig. Pairs well with creamy cheeses such as Saint Andre or a triple cream brie or camembert, oysters or lobster, rich milk chocolate, or enjoy on its own as an aperitif.
