Seven Stars Sparkling 2008
Tasting Notes:
Crafted from Pinot Noir and Chardonnay grown on our Langley estate vineyards, our 7 Stars sparkling is produced in the traditional méthode champenoise style of French champagne. En Tirage for 2.5 years in the bottle, the sparkling wine has lively bubbles with vibrant citrus and floral aromas. Crisp apple and stonefruit flavours can be found on the palate with a hint of baked goods and fig. Pairs well with creamy cheeses such as Saint Andre or a triple cream brie or camembert, oysters or lobster, rich milk chocolate, or enjoy on its own as an aperitif.
Vintage Report
The climate during the 2008 growing season was optimal. Ideal spring and summer weather was
followed by a long, temperate and dry fall harvest. These quintessential Okanagan conditions produced grapes with optimum ripeness. Slightly lower yields resulted in increased quality levels. A very good year overall, with fruit reaching excellent maturation levels with beautifully balanced colour, flavours, and acidity.

Made in the method traditionelle, the Seven Stars is a 50/50 blend of Pinot Noir and Chardonnay. It has the intense toastiness one would expect in an older vintage Champagne. It's a lovely amber hue with aromas of grilled peaches, wild honey, red berries and toast. On the palate its creamy with tart berries, minerals and more earthytoasty flavours and finishing with citrus zest and peppery spices. This bubbly wine would pair well with grilled swordfish or roasted quail.

Copper/amber in colour with fine bubbles, fresh berry and peachy aromas supported by notes of roasted nuts and toasted brioche. On the palate it has a full mousse with similar flavours of nuts and berries and bright, clean acidity. Only 149 cases of this vintage produced so get yours while you can.
