This predominantly Merlot based Bordeaux blend is full of aromas of blackberry, raspberry, currant, black cherry and molasses. On the palate this wine displays Bing cherries, tobacco and leather. This well-structured wine also displays some spiciness and vanilla characteristics. Unfiltered so serve decanted with grilled sirloin steaks or strong cheese.
This vintage was primarily crafted from the Blue Terrace Vineyard in north Oliver where we chose both Merlot and Cabernet Sauvignon because the rich, gravel-strewn soils develop tremendous flavour. We also sourced Cabernet Franc from the Rock Pocket vineyard next door. In addition, small amounts of Cabernet Sauvignon from Sundial vineyard add complexity and character to this full-bodied wine. A 21day fermentation with punched cap management of the grapes enables rich fruit extraction. The use of a variety of yeasts and terroirs also add to the complexity. Aged in American and French barrels for 24 months to refine tannins.
The 2015 growing season was a fantastic growing season in the Okanagan valley. An early start in the spring provided the necessities for good vine growth. July and August were very sunny and hot leading to sugar development within the grapes leading to much earlier than normal ripening. We began harvest Chardonnay for sparkling wine August 22 and had harvested the bulk of our grapes before the end of September. September was also warm and sunny with slightly cooler nights allowing for continued ripening. Harvest finished at the earliest date ever, October 8th.
