Our Seven Stars sparkling wine is produced in the traditional method in which the wine undergoes a secondary fermentation in the bottle that you receive it in. This adds aromas of fresh baked biscuits along with those fresh fruit aromas already present in the wine including Gala apple, peach and lime. The mousse is creamy making the wine round and well balanced. This wine is ideal for celebrations as well as sipping with hors d’oeuvres, oysters, a creamy Bleu d’Avergne or Cambozola cheese.
This sparkling wine is a blanc de blanc made from 100% Chardonnay grapes. The grapes are picked with high natural acidity so that this can be maintained throughout extended time in bottle. The wine was left “en tirage” for 18 months to ensure the development of autolytic characters. After riddling, as part of the traditional process, we disgorged this wine and added a blend of our 2014 and 2015 Reserve Chardonnay as the “dosage”, for added complexity and depth of flavour.
The 2015 season in the Okanagan Valley can be summed up in one word — fantastic. An early spring start provided the necessities for superior vine growth. July and August were very sunny and hot leading to good sugar development within the grapes and much earlier ripening than normal. We began our earliest harvest on record, on August 22, and by the end of September completed the bulk of our grape picking. September was similarly, warm and sunny with slightly cooler nights allowing for continued phenolic ripening. A harvest for the record books, was finished at our earliest date ever, October 8.
We have a singular focus. It’s about quality wine and nothing else! No trinkets, no shoes, no food, just wine. We believe premium winemaking starts in the vineyard. We carefully select specific sites throughout the Okanagan for their unique characteristics. Our fine wines reflect the special terroir of each vineyard and this is expressed in the bold flavours of the wine.
