Elegant & lithe, our Seven Stars sparkling wine is produced in the Methode Traditionelle style, whereby the wine undergoes a secondary fermentation in the same bottle in which it is served. This traditional French process contributes natural aromas of fresh baked biscuits along with those bright fresh scents already present in the wine, including Granny Smith apples, peach and lime. The mousse is creamy contributing a lovely roundness and balance. Sophisticated with a lively finish, this wine is ideal for celebrations and for enjoying with hors d’oeuvres, oysters, a rich Bleu d’Avergne or Cambazola cheeses.
A single vineyard wine, this vintage of bubbly is crafted from 100% Chardonnay, hand harvested from our Naramata Bench estate, making it a true “Blanc de Blancs”. The wine was left en tirage for 18 months to ensure the development of classic autolytic characters with toasty brioche flavours and a luxurious mouthfeel. After riddling, we disgorged this wine and added our 2015 Reserve Chardonnay as the dosage for freshness, complexity and depth of flavour.
A vintage to celebrate, the 2014 growing season in the Okanagan Valley was fantastic. An early spring start and a timely precipitation through June provided the necessities for good vine growth. July and August were very sunny and hot leading to excellent sugar development within the grapes and earlier than normal ripening. September was also warm and sunny with cool nights allowing for continued ripening. October was cooler with some precipitation that permitted extended “hang time” to ensure proper phenolic ripeness without excessive brix levels.
